How it started.
Chuck Matto traces the Flavor Train to Christmas 2016, when his older brother gave him a smoker. He shared food photos on Instagram, friends asked him to cater, and a business grew from those backyard meals.
Finding his audience.
His cooking reached viewers through social videos, a Gordon Ramsay TikTok duet and appearances on Fire Masters and BBQ Brawl. In his BBQGuys interview, Chuck credited his mother with teaching him to season by taste and make food people enjoy.
Food as connection.
Chuck told Dalstrong that his Bay Area upbringing exposed him to many food cultures. Family meals remain central to his approach. His recipes bring that mix to the table, from Italian rib pasta to fusion wings.
On the bookshelf.
In June 2026, he released his debut cookbook, Chuck’s Flavor Train: Your Ticket to Smokin’ Hot Barbecue, with 75 recipes for home cooks and backyard pitmasters.
