Mini bio
How it started.
Eloise began Fitwaffle in 2015 while documenting food and fitness on Instagram with a partner. Working as a personal trainer and fitness centre manager, Eloise wanted to show that enjoying favourite foods could fit into a balanced life. By early 2017, the account had become focused on food.
The lockdown kitchen.
When the pandemic closed restaurants in March 2020, Eloise turned to sharing recipes that followers could make at home. Fitwaffle Kitchen grew around simple desserts with few ingredients. In a 2022 interview, Eloise recalled three-ingredient Oreo fudge as an early viral recipe.
From videos to books.
Fitwaffle’s Baking It Easy arrived in 2022, followed by Baked In One in 2023 and No-Bake Baking in 2024. The publisher records No-Bake Baking as a number one Sunday Times bestseller in March 2024. Easy Air Fryer followed in 2025, with Easy 6 expanding the collection of sweet and savoury recipes in June 2026.
