Mini bio

How it started.

Born in Asturias and raised near Barcelona, José chose cooking at 15. He attended the School of Restaurants and Hotels of Barcelona and trained at elBulli with Ferran Adrià before arriving in the United States in 1991.

A home for tapas.

Jaleo opened in Washington, DC on April 5, 1993, giving José a place to share Spanish small plates with American diners. Family recipes were part of that story, including his mother’s croquetas and his wife Tichi’s gazpacho. His work now spans restaurants, cookbooks, television and the Longer Tables newsletter.

Cooking for people in crisis.

José founded World Central Kitchen after the 2010 earthquake in Haiti. Cooking alongside local families taught him to listen to how people wanted their food prepared. The organization’s large-scale feeding model developed further during the response to Hurricane Maria in Puerto Rico in 2017.

Trivia

  1. José collects old cookbooks, reading them to understand the people and places behind the recipes.
  2. His daughters are very critical of his driving, as José joked while introducing their Family in Spain series.
  3. In Haiti, local families showed José that their black beans should be mashed and sieved into a creamy sauce, a lesson in listening before helping.
