Mini bio

How it started.

Matt learned to cook alongside his Grandma June in Alabama. A trip to Central Texas drew him deeper into barbecue, and backyard cooking became competition cooking. He is self-taught, with a style rooted in sharing food and helping other people cook.

The unexpected launch.

His 2014 appearance on BBQ Pitmasters gave him a reason to bottle his homemade seasonings. Holy Cow became Meat Church’s first rub. He kept a corporate IT career while building the business, then left to focus on Meat Church.

Teaching at the pit.

Recipes, YouTube lessons and in-person classes became central to Meat Church. Matt’s Texas brisket tutorial walks fans through trimming, seasoning, smoking and resting. In 2024 he became the official pitmaster of the Dallas Cowboys, extending a connection that began with years of tailgating.

More room at the table.

In April 2026, he launched the Meat Church Podcast with his brother Josh. Early guests included Flatland Cavalry’s Cleto Cordero and football player Von Miller, with conversations moving between cooking, family and the work behind their careers.
