Mini bio

How it started.

Amaury grew up in Haute-Savoie and left the usual school curriculum at 14 for vocational training. Cooking studies in Thonon-les-Bains led to a pastry apprenticeship in Geneva, followed by advanced training at Maison Lenôtre in Paris.

Finding an audience.

In 2013, Amaury finished third on France 2’s Qui Sera le Prochain Grand Pâtissier? and took a job at Jean-Philippe Patisserie in Las Vegas. Posting creations and process videos from 2016 brought the work to an online audience, followed by international teaching.

Passing it on.

Amaury and chef Michel Ernots opened The Pastry Academy in Las Vegas in 2019. Teaching also became part of the screen work: School of Chocolate on Netflix, then Dessert Masters alongside Melissa Leong and Food Network’s Super Mega Cakes.

The pieces fans remember.

A giraffe more than 2.5 metres tall became one of Amaury’s signature chocolate sculptures in 2022. The smaller desserts matter too: the 2018 book The Art of Flavor shares twelve signature creations and about sixty recipes.
