Before the camera.
Brian worked as sous chef at Niche in St. Louis and helped create Union Loafers Cafe and Bread Bakery. In 2018, he moved into consulting for US Foods, looking for a more balanced working life.
A kitchen at home.
After being furloughed in March 2020, Brian started Weeds and Sardines, initially mixing cooking and gardening. The channel found its direction when he focused on food. His wife, Lauren Adermann, helped make the videos.
The bread that opened the door.
Brian identifies 1 Dough 3 Loaves as his breakout: it became his first million-view video in early 2021. He now develops recipes around repeatable results in a home kitchen.
Beyond recipes.
In 2024, he started Lagerstrom Home Goods, beginning with an eight-inch chef’s knife and later adding a garlic press.
