Mini bio
How it started.
Carleigh grew up on an Ontario hobby farm eating familiar meat-and-potatoes meals. With a background in media theory and journalism, Carleigh began researching plant-based eating in 2015 after cancer-risk news felt especially personal: Carleigh’s father is a colon cancer survivor.
Learning in public.
Starting with little cooking experience in a tiny apartment kitchen, Carleigh adapted childhood favorites and founded PlantYou in 2016. Simple recipe infographics caught on through Instagram. The meal-planning program later evolved into Plant Cooking Club in 2025.
Making the most of scraps.
Carleigh told Publishers Weekly that an orange-peel candy video drew millions of views and helped launch the Scrappy Cooking series. That approach became a cookbook in 2024, following the 2022 debut PlantYou. Both books became New York Times bestsellers.
Cooking for busy days.
PlantYou Quickies followed in September 2026, with practical shortcuts and meals for days when time or energy runs low. Alongside the books, Carleigh continues sharing recipes and meal plans through PlantYou.
