Mini bio
How it started.
Dominique grew up in Beauvais, north of Paris. At 16, he took a kitchen job to help support his family. Pastry drew him in because weighing ingredients and following precise recipes gave him results he could repeat. He later worked at Fauchon in Paris.
A shop of his own.
He moved to New York in 2006 to become executive pastry chef at Daniel Boulud’s Daniel. In November 2011, he opened his Soho bakery with four employees. The Cronut, his croissant-doughnut hybrid, launched in May 2013 and brought international attention to the shop.
Beyond the Cronut.
His creations include the Cookie Shot, Frozen S’more and Blossoming Hot Chocolate. He also teaches baking through cookbooks. In 2025, he opened Papa d’Amour, a bakery inspired by Asian bread culture and his children’s Taiwanese and French heritage.
