Mini bio

How it started.

Henry became interested in baking at 12, when the Bake Off tent appeared in his local park. He tried out bakes on family, friends and teachers before sharing them with his university housemates while studying English literature.

Into the tent.

He joined series 10 of The Great British Bake Off in 2019 and reached the quarter-final. Festival Week brought both Star Baker and a Paul Hollywood handshake for his chocolate kardemummabullar, the bake he later named as his favourite to make on the show.

Beyond baking.

Journalism became another part of his working life. In a 2020 interview, he said he was studying English literature at Durham alongside a journalism diploma. By 2025, the Wainwright Prize described him as the writer of The Times’s Daily Briefing and a co-writer of its Environment newsletter, covering nature books and environmental issues.

Where his interests meet.

His baking and conservation interests came together at International Animal Rescue’s 2025 Cakes for Apes afternoon tea. He also judged the 2025 Wainwright Prize before returning to host its 2026 ceremony.
