Mini bio
How it started.
Joshua grew up cooking with his mother in Los Angeles. By ten, he was cooking for his parents and neighbors. His early food blog, Slim Palate, led to The Slim Palate Paleo Cookbook in 2014; he also photographed the book himself.
From the line to the camera.
He worked at Odd Duck and Uchiko in Austin, spending nearly three years at Uchiko. His official biography dates his regular YouTube push to 2018, while he was still working there full time. After more than a year balancing both, he made videos his full-time work.
What fans know.
His But Better series rebuilds familiar fast food from scratch. That focus on technique also runs through An Unapologetic Cookbook, a number-one New York Times bestseller, and Texture Over Taste, which organizes cooking around textures such as crunchy, chewy and creamy. In September 2026, he returned to serving diners with his first restaurant, Ben & Lynn’s, in Austin.
