Mini bio
How it started.
Thomas grew up on a smallholding in Herefordshire, where fishing, foraging and farming helped shape his interest in ingredients. After Ballymaloe Cookery School, he worked at The Dorchester and Dinner by Heston Blumenthal, later joining Phil Howard at Elystan Street as sous chef in 2017.
Finding an audience.
During lockdown, Thomas began sharing home-cooking videos. His publisher identifies the butter videos as a breakout trend in 2022. The playful flavour combinations became All Things Butter, a business he co-founded with Toby Hopkinson in 2023.
From screen to table.
Thomas opened Straker’s on Golborne Road in Notting Hill in 2022. His cooking centres on seasonal produce, straightforward techniques and Italian influences. The debut cookbook Food You Want to Eat arrived in 2025; by October 2026, he had also opened his first restaurant outside London, in New York’s SoHo.

- The mussel flatbread has been on the London restaurant’s menu since it opened; Thomas brought it to the New York restaurant too.
- Straker’s lager was first made at his uncle’s brewery. For New York, the same recipe is brewed at Great South Bay Brewery.
