How it started.
Gaz grew up in Cardiff, learning to cook with his dad and working in professional kitchens from the age of 15. After years in restaurants, burnout pushed him toward a job in a builder’s yard. Adopting a plant-based diet helped rekindle his interest in cooking.
Finding an audience.
In 2016, Gaz began sharing recipes as Avant-Garde Vegan on Instagram and launched his YouTube channel. Restaurant techniques became a way to show what plants could do, from Kentucky Fried Chick’n to a fillet-style Wellington. His debut cookbook, Vegan 100, followed in 2018.
From kitchen to garden.
During the Covid lockdowns, Gaz left London for rural Wales. Growing vegetables, foraging and preserving food became central to his videos and cooking. That garden also inspired Plant to Plate, published in 2025.
Where things stand.
In a May 2026 interview on The Mood Booster, Gaz explained that he no longer calls himself vegan. His recent conversations focus on local food, community, fatherhood and the connection between growing food and everyday life.
