The blog grew into a cookbook, online courses, and a private coaching practice. By 2019, McKel reported reaching 1.5 million readers a month. Her 2016 cookbook, Nutrition Stripped, brought her whole-food recipes into print.
What she teaches now.
Her Mindful Nutrition Method brings together nutrition education, mindful eating, and self-compassion. Through courses, coaching, and her Taking Care newsletter, she explores balanced meals and the everyday experience of eating. In March 2026, she announced CARE Eating Practice certification training for other nutrition practitioners.
