Mini bio
How it started.
Molly grew up baking in Dallas and first worked in digital marketing. After bringing homemade desserts to work, a colleague encouraged her to consider culinary school. She moved to Paris in 2013 to study pastry at Le Cordon Bleu and graduated in 2014.
Finding her classroom.
After an internship at La Fabrique de Gâteaux and bakery jobs in Texas and France, she began teaching in 2017 in Strasbourg. In Versailles, she turned a room in her apartment into a pastry classroom. When the pandemic arrived in 2020, she moved classes online and reached bakers who could not travel to France.
Recipes to keep.
Her first cookbook, French Pastry Made Simple, appeared in 2021. It builds desserts from foundational recipes, much like her classes. Today she teaches through live sessions, recorded courses and Le Baking Club. Her second book, French Pastry with a Twist, with photographs by Kimberly Espinel, is scheduled for April 27, 2027.
