Mini bio

How it started.

Niki began experimenting in the kitchen as a child who avoided meat and had a dairy intolerance. Travel through Turkey, India, the Middle East and Asia helped shape her cooking. Back home, she started making the plant-based dishes she wanted to eat.

Becoming Rebel Recipes.

She launched Rebel Recipes in 2015 while working in food marketing, then left corporate life in 2016. In a My Shrewsbury interview, she recalled two turning points: Nigella Lawson sharing one of her photos and winning a Soil Association award for the blog.

From blog to books.

Her debut cookbook, Rebel Recipes, appeared in 2019. She went on to write for young cooks in Around the World Vegan Cookbook and explore everyday appliance cooking in The Vegan Air Fryer and Slow-Cooked Vegan. The latter, released in October 2026, is her seventh cookbook.

Beyond the recipes.

Niki also develops recipes, styles and photographs food, and works with brands and publishers. She co-hosts What The Focaccia with Bettina Campolucci Bordi, and her Rebel Recipes Club offers recipes and meal planning. In 2026 she shared news of a monthly seasonal food column in Vegan Food & Living.
