From her kitchen to your feed.

Nisha started Cooking for Peanuts on Instagram in 2017 as a hobby, sharing nutrition advice and plant-based meals while raising three daughters. Her focus on quick, affordable dinners helped shape the account. By 2021, she was expanding into a recipe blog and preparing her first cookbook.

A cookbook turning point.

Practically Vegan arrived in March 2022 with more than 100 budget-friendly vegan dinners. Jonathan Safran Foer wrote the foreword after encouraging her to turn the recipes he cooked for his family into a book. She later self-published Cooking for Longevity.

What she cooks now.

Her current work centers on simple meals with plant protein and fiber, alongside nutrition education about bone health, metabolic health and healthy aging. Fans can follow the recipes on her site and receive her free weekly meal plans.
