Mini bio

How it started.

Mimi started Beat the Budget in 2018 while at university. Faced with a £20 weekly food budget, she began planning meals around ingredients she could spread across several dishes. She shared the results for other students and people cooking on a budget.

Finding her audience.

Her publisher credits Beat the Budget’s growth to simple recipes and viral meal prep ideas, with recipes featured by ASDA, Sainsbury’s Magazine and the Daily Mail. By 2023, she had turned that approach into her debut cookbook, Beat the Budget, which became a Sunday Times top 10 bestseller.

From the feed to your kitchen.

Her cookbook pairs meals costed at £1.25 a portion with meal plans, shopping lists and tips for using slow cookers and air fryers. On her website, series such as Salads That Last focus on lunches that can be prepared ahead, while her noodle and pasta recipes stretch a small shop into several portions.
