Mini bio

How it started.

Toni’s early online writing included LiveJournal. In April 2012, she launched Plant-Based on a Budget to share affordable recipes with people who wanted to eat more plants. Family health struggles helped motivate the project. She initially recruited friends to contribute recipes before taking on the site herself.

Making it her work.

After losing her job in 2016, Toni tried turning the blog into her full-time work. Her approachable recipes grew into cookbooks, meal plans and cooking videos. Bean salads, including her take on cowboy caviar, became a recurring draw for new Instagram followers.

Cooking with company.

Toni collaborated with World of Vegan founder Michelle Cehn on The Friendly Vegan Cookbook and the Plant-Powered People Podcast. Their conversations ranged from cooking techniques to the everyday experience of being vegan. They released the podcast’s final episode in July 2026.
