Mini bio
How it started.
Ashley grew up in a Filipino household where meat and eggs were central to meals. After learning about animal agriculture’s environmental effects, she switched to a vegan diet overnight. Experimenting with plant-based versions of familiar dishes became the foundation of Eat Figs, Not Pigs.
Finding her audience.
By 2017, her vegan comfort food was attracting attention from Foodgawker and The Feedfeed. A Fresno Bee report described her growing blog and the kitchen experiments she shared with her wife, Ashlee Marchetti.
From blog to book.
Her first cookbook, Make It Vegan, arrived in May 2021 through Victory Belt. Its 75 recipes carry her comfort-food approach into breakfasts, lunches and dinners. She told ABC30 that publishing a book had been her goal when she started the blog.
Beyond the blog.
Ashley has developed recipes as a California Avocado Commission brand advocate and was named to BuzzFeed’s Goodful Creator Collective. Her own site continues to feature vegan soups, tofu dishes, restaurant-inspired recipes and game day snacks.
