Mini bio

How it started.

Raised in a Honduran household in New Orleans, Bryan learned to cook through family food and restaurant work. He studied accounting, ran a college cooking club and sold king cakes during Mardi Gras. Even while working as a CPA, he kept baking at home.

Finding his own bread.

He left accounting and moved to Miami in 2016. Bakery jobs, pop-ups and wholesale baking helped him develop his craft. In 2018 he created Artisan Bryan, sharing breads such as sourdough pan de coco and bringing Latin American traditions into the conversation about artisan bread.

From the blog to the bookshelf.

Artisan Bryan won SAVEUR’s 2019 Editors’ Choice award for Baking & Sweets. His first cookbook, New World Sourdough, followed in June 2020 and sold out its first printing during the pandemic baking boom. Pan y Dulce arrived in November 2024, broadening that exploration of Latin American breads and sweets.

Baking, on screen and in person.

Bryan has hosted Baked in Tradition and The Artisan’s Kitchen, judged Netflix’s Blue Ribbon Baking Championship and hosted The Flaky Biscuit Podcast. His newsletter Baking Simplified shares practical recipes and workshops. At Diljān in Brooklyn Heights, he is exploring Afghan baking as executive chef.
