Mini bio

How it started.

Tosi grew up baking with family, and credits her grandmother’s oatmeal cookies with helping her fall in love with dessert. A math major before a career in pastry, Tosi worked in New York kitchens including Bouley and wd~50 before joining David Chang at Momofuku.

Finding a voice.

At Momofuku, an initially administrative job grew into a role building the restaurants’ pastry program. Desserts inspired by childhood treats led to Milk Bar’s opening in 2008. Cereal Milk, Compost Cookies and cakes with exposed layers became signatures.

Baking together.

Tosi brought that curiosity to cookbooks and television, including MasterChef, Chef’s Table: Pastry and Bake Squad. In March 2020, Bake Club began as an Instagram gathering for home bakers. It grew into a recipe archive, videos, a weekly newsletter and, in 2024, a cookbook with Shannon Salzano.
