Mini bio
How it started.
Humm began his culinary training at 14 in Switzerland and earned his first Michelin star at 24. In 2003 he moved to San Francisco to lead the kitchen at Campton Place. Three years later, he became executive chef at Eleven Madison Park in New York.
The New York breakthrough.
He and Will Guidara bought Eleven Madison Park in 2011. It reached No. 1 on The World’s 50 Best Restaurants list in 2017, and Humm became its sole owner in 2019. His food became known for stripping dishes back to a few carefully chosen ingredients.
Changing the kitchen.
During the pandemic, his team used the closed restaurant as a community kitchen with Rethink Food, the nonprofit he co-founded. EMP reopened with an entirely plant-based menu in 2021 and earned three Michelin stars for that menu in 2022. In October 2025, he added a choice of select animal products while keeping a plant-based menu.
Beyond the dining room.
His work now stretches across restaurants, books and food education. UNESCO appointed him Goodwill Ambassador for Food Education in September 2024. His children’s book Daniel’s Dream follows a different kind of creative journey, drawing on his own childhood.
