Mini bio

How it started.

Grant grew up helping in his family’s Michigan diner. He graduated from the Culinary Institute of America in 1994, then developed his craft in kitchens including The French Laundry and elBulli. At Trio in Evanston, his own approach began drawing national attention.

The breakthrough.

Food & Wine named him a Best New Chef in 2002, and the James Beard Foundation named him Rising Star Chef in 2003. He opened Alinea with Nick Kokonas in 2005. The restaurant became a home for dishes that invite guests to play, including an edible helium balloon made from green apple taffy.

A personal chapter.

Grant’s treatment and recovery from tongue cancer became part of the story he shared in Life, on the Line, written with Kokonas. His life and work have also appeared in Spinning Plates and Netflix’s Chef’s Table.

Still asking questions.

His work expanded into Next’s changing restaurant concepts and The Aviary’s cocktails. Today he is The Alinea Group’s creative director and co-owner. His 2026 essays bring fans into the creative process, explaining how art, memory, humor and the dining room itself can shape a meal.
