Mini bio
How it started.
Jaimee traces @jaifit8 to her own struggle to eat well while teaching at a Title I school in a food desert. Preparing meals ahead gave her food to come home to and fewer decisions to make after work. That experience became the starting point for the practical recipes she shares.
Food with roots.
A first-generation Mexican American based in Los Angeles, she develops lighter, protein-focused versions of Mexican dishes inspired by her childhood. Her 2025 cookbook, Light & Easy Mexican Cooking, gathers more than 60 recipes with macro information, from breakfast tacos to chicken and nopales in red sauce.
From the classroom to the kitchen.
Before becoming a full-time creator, she worked as a middle school humanities teacher and an instructional leader. A 2025 Show Up Real interview explored that transition and the audience she built around Mexican recipes. By August 2026, her own posts described teaching in higher education and planning meals around grading and student questions.
Making it workable.
Her Professor Prep posts combine recipes with shopping lists and permission to simplify. She suggests ingredient swaps and ready-cooked shortcuts so readers can fit cooking around their own schedules. She also shares running updates, including her decision to train for the LA Marathon again.
