How it started.
Before the cookbooks and television shows, Jess wrote BurgerMary. In a 2012 SBS interview, the Melbourne creator was already covering burgers, barbecue and Southern comfort food across Australia and Texas. Her own biography describes tasting Texas barbecue as the spark that made her want to understand meat.
From curiosity to a following.
She learned by cooking and talking with ranchers, butchers, processors and meat scientists. While testing recipes for her website, she developed the Black seasoning. Its following helped turn those experiments into Hardcore Carnivore, the brand she founded in 2015.
Learning, then sharing.
Jess later completed a Graduate Certificate in Meat Science at Iowa State University. Her work makes that knowledge useful to home cooks through recipes, books and television. Her 2018 US cookbook, Hardcore Carnivore, covers both cooking techniques and recipes for beef, pork, lamb, poultry and game.
On screen and around the fire.
She hosted Hardcore Carnivore on Outdoor Channel and the Texas food-travel series Feast by Fire, and joined the judging panel of Food Network’s Pitmasters in 2026. That year also brought Prime Cuts, her second cookbook, organised around understanding and cooking individual cuts.
