Mini bio

How it started.

Before pastry, Ksenia explored knitting, painting, acting, photography, and website design. Seeing the desserts made by her pastry-chef sister sparked her interest in entremets. Studying in Switzerland gave her access to a professional kitchen, and she later learned from chefs including Frank Haasnoot, Jordi Bordas, Karim Bourgi, and Amaury Guichon.

The cakes fans recognize.

Her colorful mirror-glazed cakes brought her an online audience and the nickname Glazing Queen. Beneath those finishes, her work centers on the chemistry of ingredients and the balance of mousse, sponge, crunch, and inserts. She turned that approach into online lessons and hands-on classes around the world.

Building a pastry classroom.

She launched Haute food colors in 2018 and founded PastryClass in 2022. Her first Russian recipe book appeared in 2019; her own biography reports that its initial 3,000 copies sold in two days. Her books and classes let fans explore both the glossy finishes and the cake structures underneath.
