Mini bio
From ice cream to plants.
Richard founded Blu Top, an ice cream sandwich business, in 2015 after returning from San Francisco. Sharing a production space with vegan street-food cooks Eat Chay helped him rethink dairy. A lifelong vegetarian, he became vegan in November 2017 and closed the business in 2018.
Learning in public.
School Night Vegan began on Instagram in 2017. Richard launched the blog in November 2018 after his husband encouraged him to record his recipes and lent him a DSLR. He taught himself food styling and photography through YouTube videos. By his 2019 account, the blog was his full-time job, and stretchy vegan mozzarella was his most successful recipe.
Recipes become books.
His work grew into recipe development with Wicked Kitchen and a 2020 cookbook deal with Bloomsbury. His debut, Anything You Can Cook, I Can Cook Vegan, came out in 2023, exploring plant-based versions of familiar dishes. Stress-Free Dinners followed in July 2026, focusing on everyday meals with supermarket ingredients.
Beyond the recipe blog.
Richard also shares recipes and personal updates through his School Night Vegan newsletter. He hosts vegan holidays with The Getaway Co, and in October 2026 wrote to readers while leading a trip from Athens to Santorini.
