Mini bio
How it started.
Eloise founded Fitwaffle with her fiancé in 2015 while documenting food and fitness on Instagram. She worked as a personal trainer, and learning about nutrition helped her move away from strict ideas about which foods she could enjoy.
Finding her kitchen community.
When lockdown began in March 2020, she started sharing baking recipes on Instagram. Simple methods and short ingredient lists became the heart of Fitwaffle Kitchen, giving home bakers an approachable place to start.
From videos to books.
Her first cookbook, Baking It Easy, arrived in 2022. Baked In One followed in 2023, No-Bake Baking in 2024 and Easy Air Fryer in 2025. With Easy 6 in 2026, she continued sharing simple recipes across both sweet and savoury cooking.
