Mini bio
Finding her way.
Ruby studied architecture, but a spell of unemployment gave her a different kind of project. Baking became a calming hobby while she lived with her parents and looked for work. She has described learning the foundations from a Paul Hollywood baking book.
Into the tent.
In 2018, Ruby reached the final of The Great British Bake Off. Her vegan cake famously collapsed, but she kept going and earned consecutive Star Baker titles in Danish Week and Pâtisserie Week. She finished as a runner-up to Rahul Mandal.
A slice for everyone.
Her first cookbook, One Bake, Two Ways, appeared in 2024, pairing 50 bakes with a plant-based version of each. Its flexible approach grew out of her British-Indian upbringing and mostly vegetarian diet. Her online series Around the World in 80 Cakes became a second cookbook in 2026, exploring the stories as well as the flavours behind international cakes. On The Last Bite, she shares recipes alongside chatty updates from her own kitchen.
