How it started.
Raised in Gloucestershire, Tom went to culinary school in Cheltenham at 18. He began in local country-house and hotel kitchens, then moved to London in his early twenties to work with chefs including Gary Rhodes and Steven Bull. He later became head chef at Adlards.
A pub of his own.
In 2005, Tom and his wife Beth opened The Hand and Flowers in Marlow. It became the first pub awarded two Michelin stars in the 2012 guide, announced in October 2011. His food kept the comfort of a pub meal while bringing a restaurant chef’s care to the cooking.
From the kitchen to the screen.
His slow-cooked Aylesbury duck won the main-course round of Great British Menu in 2010. He went on to write cookbooks and present food programmes, and now also judges Great British Menu. His recipes range from pub favourites to lighter home cooking and food cooked over coals.
