How it started.
A trip to Austin, Texas, sparked William’s interest in barbecue. Backyard cooking led to competitions and then social media. He formed the competition team Packin’ Heat BBQ before opening up his cooking to more experiments on Instagram.
Finding his voice.
Photography was already a hobby, making Instagram a natural place to share his food. In his Fire & Beer interview, William recalled nearly leaving the platform before refocusing on enjoyable, useful content. Lobster Anywhere became his first sponsor in 2018, when he had 10,000 followers and had never grilled lobster. That partnership helped him develop instructional videos.
What fans come for.
His recipes range from citrus shrimp to pork belly burnt ends. Steak pinwheels are another signature: FOGO credited him as the inspiration for its flank steak version and later brought him together with Ron Dimpflmaier for Philly Cheesesteak Pinwheels. Their version combines flank steak, cheese and beer-braised vegetables, served on garlic bread crostini.
